Some grains become popular because of a trend. Others have been part of Indian agriculture and food traditions for centuries. Proso Millet belongs to the latter. A small, pale-coloured millet with a mild, slightly nutty taste, it has been cultivated across different parts of India and has traditionally been used in everyday meals where grains needed to be simple, versatile and dependable.
Known by regional names such as Barri, Barri Millet, Bariga, Variga and Chena, Proso Millet may be called by different names from one part of India to another. It is also commonly referred to as Common Millet. This variety of names reflects the long history of millets in India's regional farming and food cultures.
Just Organik Organic Proso Millet brings this traditional grain to the modern Indian kitchen. Naturally gluten-free, Proso Millet is a source of dietary fibre and naturally contains nutrients such as protein, phosphorus, magnesium and B vitamins including niacin. Its mild flavour makes it particularly easy to introduce into meals, even for those trying millet for the first time.
Proso Millet can be cooked as a grain and used in place of rice in many familiar preparations. Rinse and cook it until tender, then serve it with dal, sabzi, sambar, rasam or curry. It can also become the base for millet khichdi, pulao, upma and savoury breakfast bowls.
Across different Indian kitchens, millet grains have also found their way into regional preparations, sweet dishes and festive foods. Proso Millet can be experimented with in millet dosa, idli, porridge, kheer and ladoo, or combined with vegetables, pulses and spices for a complete meal.
Its relatively mild taste is one of its strengths. You do not need to completely change the way you cook to enjoy Proso Millet — start by replacing part of the rice in a familiar recipe and gradually explore it in different preparations.
From Barri and Bariga to Variga and Chena, Proso Millet carries different names across India, but its place in traditional grain culture remains the same. Just Organik Organic Proso Millet makes this lesser-known traditional grain easy to discover, cook and enjoy in the everyday Indian kitchen.
For one person: Start with approximately 50–60 g of dry Proso Millet when using it as the main grain in a meal. This generally makes a practical single serving after cooking, depending on the recipe and appetite.
Basic stovetop method: Rinse Proso Millet thoroughly until the water runs relatively clear. Soaking for 15–30 minutes can help reduce cooking time. Drain, add fresh water and cook until the grains are tender. Fluff gently and use like cooked rice.
1. What is Proso Millet called in India?
Proso Millet is known by different regional names, including Barri, Barri Millet, Bariga, Variga and Chena. It is also commonly called Common Millet. The name can vary depending on the Indian state and language.
2. How do you cook Proso Millet like rice?
Rinse the Proso Millet thoroughly and soak it for around 15–30 minutes if desired. Drain and cook it with fresh water until tender. Once cooked, fluff it gently and serve it like rice with dal, sabzi, sambar, rasam or curry.
3. What is the water-to-millet ratio for cooking Proso Millet?
The amount of water depends on the preparation and the texture you want. For a fluffy rice-style preparation, start with approximately 2 parts water to 1 part Proso Millet, then adjust based on soaking time, cookware and the desired consistency.
4. Can Proso Millet be cooked in a pressure cooker?
Yes. Rinse the millet and soak it before pressure cooking if convenient. Add sufficient water and cook until tender. Pressure-cooking is particularly useful when preparing softer dishes such as Proso Millet Khichdi or Pongal.
5. What does Proso Millet taste like?
Proso Millet has a mild, slightly nutty and earthy flavour. Its relatively neutral taste makes it easy to pair with Indian spices, vegetables, dal and curries and can make it a convenient alternative to rice in many dishes.

9. Can Proso Millet be eaten by children, pregnant women or people with diabetes?
Proso Millet is a nutritious whole grain and can form part of a varied diet for many people, including children and pregnant women, when prepared appropriately. For people with diabetes, the overall meal, portion size and individual dietary needs matter; Proso Millet should not be considered a treatment for diabetes. During pregnancy or for specific medical or dietary conditions, individual dietary advice from a qualified healthcare professional is appropriate.
10. What is the difference between Proso Millet and other millets?
Proso Millet is a distinct millet variety with its own grain size, flavour and cooking characteristics. It is commonly known as Barri, Bariga, Variga or Chena in different parts of India.
