There are some foods that need no introduction in an Indian kitchen. Bajra Roti is one of them. Across Rajasthan, Haryana, Gujarat and parts of North and Western India, the humble Grey colored Bajra roti has been a winter favourite for generations - traditionally served hot with ghee, dal, sabzi, lehsun chutney or a bowl of curd.
At the heart of this rustic flatbread is Pearl Millet, commonly known as Bajra. Its small, round grains have a naturally earthy, slightly nutty character, and when freshly milled, they become the distinctive greyish flour that gives Bajra roti its unmistakable taste and texture.
Just Organik Organic Pearl Millet Flour (Bajra Atta) is made from carefully selected Pearl Millet grains and stone-ground using the traditional Chakki method. The slow, traditional grinding process turns the whole grain into a fine, naturally textured flour that retains the characteristic flavour of Bajra.
Pearl Millet is naturally gluten-free and provides dietary fibre and plant-based protein, along with naturally occurring nutrients such as iron, magnesium, phosphorus, zinc, niacin and folate. Its naturally hearty character makes Bajra Atta a popular choice for people looking to include more traditional millet-based foods in their everyday diet.
The most familiar way to enjoy it is, of course, the classic Bajra Roti. Knead the flour with warm water, shape it carefully and cook it on a hot tawa until cooked through, then serve it hot with dal, seasonal vegetables, kadhi, curd or a little ghee. Its earthy flavour also works beautifully in Bajra Paratha, Bajra Bhakri and Bajra Cheela.
But Bajra Atta does not have to stop at traditional flatbreads. It can be combined with other flours to make homemade multigrain rotis, used in savoury pancakes and cheelas, or incorporated into selected baked recipes for its distinctive millet flavour.
Bajra has traditionally been associated with India's colder months, when a hot Bajra roti served straight from the tawa becomes the centre of a comforting meal. Yet its versatility makes it suitable throughout the year.
From the Bajra rotis of Rajasthan and Haryana to bhakri traditions in western India, Pearl Millet Flour carries a distinctly Indian food heritage into the modern kitchen.
