Despite its name, Buckwheat is not a cereal grain. In India, it is better known as Kuttu, and for generations it has been a familiar ingredient in kitchens, particularly during Navratri, Ekadashi and other fasting occasions.

High in the hills of Uttarakhand, where traditional crops have long been part of mountain food culture, Buckwheat has found its own place on the Indian plate. Its naturally earthy, slightly nutty flavour gives it a character that is quite different from everyday rice and wheat.

Buckwheat is naturally gluten-free and provides dietary fibre, plant-based protein, magnesium, phosphorus, manganese, copper and iron, along with naturally occurring antioxidant compounds. For one person: Approximately 50–60 g of dry hulled Buckwheat (Kuttu Giri) is a practical starting quantity when using it as the main grain in a meal. Adjust according to appetite and the other ingredients being served.

Basic cooking method: Rinse the Kuttu Giri thoroughly under running water. Soaking it for around 20–30 minutes can help shorten the cooking time. Drain and cook with fresh water until the kernels become tender. Once cooked, cover and allow the buckwheat to steam for 5–10 minutes. Fluff gently before using.
