Long before “superfoods” became a modern food trend, Amaranth was already a familiar grain in the hills of Uttarakhand and traditional Indian kitchens. Known as Rajgira, Rajgiri and Ramdana, this tiny grain has been enjoyed for generations, particularly during vrat, fasting and festive occasions.
In the villages and hill regions of Uttarakhand, Amaranth has traditionally been valued as a hardy local crop and a versatile food. Its tiny grains, naturally nutty flavour and distinctive texture have found their way into simple home cooking as well as special fasting recipes.
Just Organik Organic Amaranth Flour is made from Amaranth sourced from Uttarakhand, carefully cleaned and processed before being stone-ground using the traditional Chakki method. The traditional grinding process gives the flour its characteristic texture while retaining the natural character of the grain.
Amaranth has a particularly interesting nutritional profile. Its protein contains all nine essential amino acids, including lysine, an amino acid found in relatively lower amounts in many common cereal grains. It also naturally provides dietary fibre, iron, magnesium and phosphorus, along with other naturally occurring nutrients.
The flour is naturally gluten-free and has a mildly nutty, earthy flavour that works beautifully in Indian cooking. It is especially well known as Rajgira Atta for traditional fasting recipes.
Use Just Organik Amaranth Flour to prepare Rajgira roti, Rajgira paratha, puri and cheela, or make traditional vrat dishes with ingredients such as sendha namak, potatoes, ghee and curd, according to the rules of your particular fast.
